Cold Pasta with Fresh Tomato Pulp | Pasta al Sugo Crudo

An easy dish to prepare for a hot summer weekend lunch. Credit must be given to Maria Teresa ingenuity…the tomato sauce is a simple preparation of fresh tomato pulp flavoured with fresh basil, salt, pepper, garlic and extra virgin olive oil. Chill in the fridge and toss in cooked tagliolini when ready to serve. Make sure you have bread to soak up the leftover yummy sauce, every drop is worth savouring!
