Our bodies crave for comforting during the winter months and naturally a plate of pipping hot and creamy pasta can be a delightful nourishment. Comfort food often carries the stigma of being too rich and fattening, and at times even being unhealthy.

The key to comfort food does not lie solely on fat and gooey cheeses, our cravings can be easily satisfied with dishes that are packed with flavours even when served warm. Mushrooms are great comfort food ingredients. They complement well with rice or pasta and the larger ones may be served as a main dish.

I enjoy whipping up a mushroom pesto to be served with fresh egg pasta. It is a soul comforting dish minus the fat. To make the mushroom pesto, sauteed the mushrooms with a chopped parsley and blend the warm sauteed ingredients with 1-2 organic eggs. Stirred the pesto immediately into the cooked fettucine. If you like a glass of wine to accompany your meal, I suggest a glass of Teroldego for that extra comfort!!
